      This May, we're featuring Toby's Estate Brunswick as our Coffee of the Month. It's a blend that has been part of our range for a long time - bold, structured, and built for milk-based coffee. If you're familiar with Toby's Estate through Woolloomooloo, Brunswick is their milk-based hero: a different expression from the same roaster with its own character worth trying.

      About the Blend

      Brunswick is a 100% Arabica espresso blend roasted to a medium level, with a strength rating of 4 out of 5. Toby's Estate describes the body as medium to full with an enduring, smooth finish. It's recommended for milk-based drinks.

      The tasting profile is spice, toffee, and dark chocolate - notes that Toby's Estate have built into a blend that is bold and sweet with a clean, structured finish.

      The sliding yield scale reflects how espresso changes as freshly roasted coffee rests and degasses. Earlier in the bag's life, a higher yield balances the intensity of fresh coffee. As the beans settle into their peak window at 11-15 days, a tighter yield produces a more structured, flavour-forward shot. From 16 days onward, pulling back to 36g compensates for the natural reduction in intensity that comes with age.

      Toby's Estate provide grind and dose guidance alongside the recipe: dosing up increases intensity, viscosity, and body; lowering dose produces clarity, structure, and a more refined flavour. A finer grind increases flavour intensity and richness while lowering acidity; a coarser grind opens up balance and clarity while mellowing the overall flavour and refining the finish. Use these as adjustment points once you've established the baseline.

      The Toby's Estate Organic Blend is a certified organic espresso blend with a full body, enduring and satisfying finish, and flavours of caramel, cocoa, and fruits - also recommended for milk.

      The key difference is certification: the Organic Blend is fully certified organic, which may be the deciding factor for some buyers. On flavour, the Organic Blend is caramel and cocoa-led with a fruit note, compared to Brunswick's spice, toffee, and dark chocolate. Both have a full body and a long finish, but the flavour profiles are distinct.

      Use Brunswick within 4-6 weeks of the roast date. We recommend storing in a vacuum-sealed canister - the Fellow Atmos Electric Vacuum Canister or the Airscape Coffee Storage Canister. Keep in a cool, dark place and avoid refrigeration.
