The sliding yield scale reflects how espresso changes as freshly roasted coffee rests and degasses. Earlier in the bag's life, a higher yield balances the intensity of fresh coffee. As the beans settle into their peak window at 11-15 days, a tighter yield produces a more structured, flavour-forward shot. From 16 days onward, pulling back to 36g compensates for the natural reduction in intensity that comes with age.
Toby's Estate provide grind and dose guidance alongside the recipe: dosing up increases intensity, viscosity, and body; lowering dose produces clarity, structure, and a more refined flavour. A finer grind increases flavour intensity and richness while lowering acidity; a coarser grind opens up balance and clarity while mellowing the overall flavour and refining the finish. Use these as adjustment points once you've established the baseline.
